Banana Rum Rice Fool

 
Ingredients:
  • 4 Bananas peeled
  • 200 g Cooked white rice (any type)
  • 4 Tbs Soft dark brown sugar
  • 4 Tbs Dark rum
  • 4 Tbs Chocolate nut spread
  • 500 g Natural Greek yoghurt
  • 4 Crisp biscuits or wafers to decorate
Directions:
  1. Chop half the bananas into the bases of four stemmed glass goblets or tumblers.
  2. Put the rice, sugar, rum, chocolate nut spread and half the yoghurt into a food processor. Whizz to a speckled marbled puree or fool.
  3. Spoon a portion on top of the bananas. Top with the remaining bananas, remaining yoghurt, then add the biscuits or wafers. Serve cool.
