Cajun Red Snapper

| Ingredients: |
- 1 lb Fresh red snapper (fillets)
- 1 cup Sliced celery
- 1 cup Chopped bell peppers
- 1/2 cup Minced onion
- 1 tsp Garlic powder
- 1/2 tsp Bay leaves
- 1/2 tsp Pepper
- 4 cup Prepared chicken bouillon
- 2 cn (16 oz.)cajun style stewed tomatoes (drained)
- 1 cn (6 oz.) tomato juice
- 4 cup Rice

| Directions: |
- Preheat oven 400 . Cut catfish into small pieces. Combine all ingredients (except rice) in shallow baking dish. Stir well to combine. Bake for approx. 20 minutes or until catfish is tender and fully cooked. Serve over cooked rice. Serves eight.
