Crunchy Jicama and Melon Salad

 
Ingredients:
  • 1/2 md Jicama Cut Into Julienne Strips; About 1 1/2 Cups
  • 1/2 md Cantaloupe Cut Into 1/2- Inch Cubes, About 1 1/2 Cups
  • 2 Tbs Fresh Mint Leaves Chopped OR
  • 2 tsp Dried Mint Leaves Crushed
  • 1 tsp Grated Lime Peel
  • 3 Tbs Lime Juice
  • 1 tsp Honey
  • 1/4 tsp Salt
Directions:
  1. Mix all of the ingredients in a glass or plastic bowl, tossing to coat. Cover and refrigerate for about 2 hours or until well chilled.
