| Ingredients: |
- 1/2 md Jicama Cut Into Julienne Strips; About 1 1/2 Cups
- 1/2 md Cantaloupe Cut Into 1/2- Inch Cubes, About 1 1/2 Cups
- 2 Tbs Fresh Mint Leaves Chopped OR
- 2 tsp Dried Mint Leaves Crushed
- 1 tsp Grated Lime Peel
- 3 Tbs Lime Juice
- 1 tsp Honey
- 1/4 tsp Salt

| Directions: |
- Mix all of the ingredients in a glass or plastic bowl, tossing to coat. Cover and refrigerate for about 2 hours or until well chilled.
