Southern Style Blackeye Peas

 
Ingredients:
  • 2 cup Blackeye peas
  • 1 cup Uncooked rice
  • 1/2 tsp Pepper
  • 1 sm Ham hock
  • 8 cup Cold water
  • Salt to taste
Directions:
  1. Place ham hock in water; bring to boil; reduce heat and simmer for 30 minutes. Add peas to ham, continue simmering 1 1/2 hours, add rice and simmer 45 minutes or until rice and peas are done and liquid is almost absorbed. Remove meat from bone/ Serve peas and rice on hot platter, place ham on top.
